Consistent Policy in Procurement, Processing, and Sales

At Kukatsu, we purchase fish directly from producers and deliver them to our customers through various processes. Every step and department in this process follows a consistent policy and upholds high standards in their daily work.

Resting the Fish, Enhancing Quality 02

Kyukatsu has a massive tank complex comprising 28 sections and a total capacity of 240 tons. The fish we procure are released into these tanks to recover from the stress accumulated during long transportation. We use seawater drawn from the Genkai Sea, which is filtered and carefully controlled to adjust water quality and temperature.

Careful Sorting and Transportation 03

We own two large and seven medium-sized live fish transport vehicles. We handle the fish quickly during transfers between the vehicles and the tanks, minimizing stress on them. Additionally, we prioritize safe driving during transportation, avoiding sudden acceleration or braking whenever possible.

Dedicated Processing Room in Our Center04

In addition to managing live fish, we provide filleting services, including three-piece fillets. Fish caught from the tanks are swiftly bled, and their nerves are expertly treated by our skilled staff before being transferred to a dedicated processing room within the facility. Our clean processing and packaging area complies with HACCP standards. After careful handling, the fish are vacuum-packed and shipped out.
