Product description

Hamachi (Buri) Yellowtail is a fish belonging to the Carangidae family within the order Perciformes. They spawn in the southern East China Sea around February to March, in warm waters. The fry, which grow to be just a few centimeters long, live attached to drifting seaweed and gradually migrate north, carried by the Kuroshio and Tsushima currents. These “mojako” (young fish among seaweed) are caught for farming, and over a period of 2-3 years, they grow to a size of 3 to 5 kilograms. Particularly from autumn to winter, they become rich in fat and taste delicious.
Known as a “shusseuo” (promotional fish), its name changes as it grows. In Kansai, it is called Tsubasu, Hamachi, Mejiro, and Buri, while in Kanto, the names change from Wakashi, Inada, Warasa, to Buri as the fish increases in size. Hamachi is widely used in sashimi, teriyaki, and as sushi toppings.
