The Madai, a fish from the Perciformes order and the Sparidae family, is actively farmed in areas such as Kumamoto, Nagasaki, and Ehime. Traditionally regarded as an essential fish for celebratory occasions, it is perhaps the most beloved fish among the Japanese.
Madai can be enjoyed in various ways, such as sashimi, grilled dishes, sushi toppings, “tai-meshi” (a dish of rice cooked with madai), and “tai-chazuke” (a dish of cooked rice topped with Tai served with broth poured over top), making it a versatile and valuable fish.
